There is nothing better than waking up late on a chilly Sunday morning, staying in your pajamas while drinking an entire pot of coffee. During these lazy mornings, I love to whip up something that combines the favorite ingredients of breakfast and lunch together in one dish. (I believe the trendsetters refer to this blend as “brunch”, but that sounds a little too European for me. Perhaps lunchfast or breakunch would catch on.)

Don’t let quiche intimidate you! I honestly throw together whatever veggies I have in the fridge with a few eggs, milk and a pound of cheese.  Mix it all together, throw it in a bread-loaf pan and bake it. It’s quick and easy, and it always helps use up your leftover vegetables.

This new recipe was an attempt to make one of those fancy quiches that you get in a restaurant – the ones with a crust that looks more like a slice of egg pie. It turns out it is exactly the same as my “Crazy Quiche Mix Up” described above, except you just throw in a little biscuit/pancake mix to the batter. This gives is a basic crust on the bottom when all is said and done, so it does end up a little more fancy. Perhaps this is the perfect dish for your Sunday Lunchfast.

Ingredients:

4 eggs
¾ cup Bisquick
2 cup milk
1/3 cup freshly grated parmesan cheese
6 ounces shredded cheddar cheese
2 T pesto
1 T crushed garlic
salt and pepper
2 cups chopped veggies (Example: broccoli, mushrooms and onions)
3-4 Veggie Sausage patties (cooked)

Directions:

Mix milk, Bisquick and eggs together in a bowl. Add cheeses, pesto, garlic and spices. Stir in veggies and sausage.

Pour into deep-dish pie pan.

Bake at 350º for approximately 25 minutes. Top should be slightly browned and eggs should have firmed up. (Time will vary based on pan used. I used a heavy dish that required more time for the eggs to cook thoroughly. A thinner pie pan would cook faster.)

Quiche is not an exact science, so have fun with your recipe. Use variations in your veggies, cheeses and herbs.
