It is another beautiful Sunday morning – the 4th that I have spent in Honduras. It’s hard to believe that 4 weeks have already passed and we are coming very close to Semana Santa. “Holy Week” is apparently a crazy week down here filled with carnival-like festivities as many Hondurans and Central Americans flock to the beaches.
I hope we have a chance to get downtown a bit, but for most of it, we will be working at the bar. Have to admit – I am a bit nervous!! I have heard stories that the beach in front of our bar will be packed and we will be slamming up here. Sounds good and all – until you think that there’s only two of us working this restaurant and we may get in over our heads. Oh well – we’ll do what we can!! Hopefully the beer people WILL deliver on time, but I worry about anyone delivering next week since it’s a holiday. Who knows if they already took off work for the week – they tend to whether there’s a holiday or not. And god help us, because it’s supposed to rain on Tuesday and Wednesday! Well, part of living here is learning to shrug it all off and not worry. And that is getting easier every day.
Not much has happened since I last wrote. There has been sunshine every day this week and the ocean is so blue and beautiful. Our beach is still full of twigs and logs, but the locals have been picking them up by the bundles to burn for their stoves. So, we have about half of it cleaned up already! Still deciding whether to get it cleaned up for the holiday since it’s going to rain again and it may help to keep people off of our beach if it’s not the cleanest one in the area.
As for the restaurant, we are getting into a bit of a groove and it feels good! We pretty much had our purchases and prep down pat for the week. We have a much more extensive menu with unique items, such as Hawaiian Burger, Shrimp Burger, Shrimp Tacos and the latest hit “Sloppy Jason”. Our regular customers have been raving about everything we serve, and it feels really cool to get compliments on our cooking from strangers. I’ve always wanted to open a restaurant and be able to put some of my favorite dishes out for the public to try. It makes me happy to see them being well received. I really can’t wait until we get the rest of the kitchen fully functional so that I can try out some baked goods and dinner entrees.
