I have really wanted to try to get into making breads, but I do not have a clue about it. On a recent trip to Ecuador, someone made fresh flatbread for our dinner. It was a simple mix of flour and water, and then they just cooked it in a pan. It was very similar to pita bread, but it was a bit denser like a thick tortilla. When we got back from the trip, I started experimenting with this basic recipe, and it seriously could not be easier.
Ingredients:
1 ½ cup whole-wheat flour
½ cup water, plus a couple teaspoons
1 tsp salt
1 tsp spices (garlic powder, Italian seasonings, etc)
Mix the flour and salt together in a bowl. Add in a ¼ cup of the water, and start mixing together with your hands. It will start to stick together. Slowly add in the rest of the water, a couple teaspoons at a time. It took me about a ½ cup of water, plus another teaspoon or two.
You want it to be pretty dry and not sticky at all. Once all of the flour is mixed together into one doughy ball, you can add in the spices. I put in a little garlic powder and Italian seasonings. It just gives it a little flavor. Let it rest for about ten minutes.
Cut the big dough ball into about 6 pieces. I rolled each piece into a small bowl, just so that it would maintain a slightly round shape when rolled out. Using a large cutting board or flat surface, roll each of the mini-dough balls. It is pretty impossible to get them to stay in perfect circles, but just work them slowly and turn the dough often to get it to maintain some shape.
Heat up a griddle or a large pan with a flat surface. I had the pan pretty hot, and then just lowered it to about a medium flame. I kept the pan dry, but I did brush on some olive oil on each side. The bread should start to bubble up a little as it is cooking. These airy little pockets are a good thing. Let it bubble and brown a bit on each side. I had to flip a third time on some pieces before I saw the air pockets.
Brush with a little olive oil, sprinkle with a little salt and serve with some homemade hummus for a healthy snack!
